If you walk into almost any Spanish bar you can guarantee to find this as one of the staple tapas. Nice hot or cold, it's also easy to make.
Ingredients: (to serve two - four)
2 medium sized potatoes
1 small green pepper
1 medium onion
4 large eggs
50g Spanish spiced sausage (chorizo)
3 tablespoonfuls of Olive oil
Salt and freshly milled black pepper
First peel and dice the potatoes into small cubes, then heat 2 tablespoonfuls of the oil in a frying pan and fry the potatoes until they're evenly browned, stirring them regularly. This takes about 10 minutes. Then add the chopped onion, pepper and spiced sausage. Stir well and cook for another 6 - 8 minutes.
Then beat the eggs and season them with salt and pepper before pouring them into the frying pan, onto the rest of the dish. Cook this mixture for 3 minutes or so whilst drawing in the edges so that the uncooked egg runs into the gap between the tortilla and the pan.
When it is firm, but still slightly moist, turn it out onto a plate then heat the remaining oil in the pan and put the tortilla back into the pan the other way up for a further 3 minutes.
Serve immediately or later - It's nice hot or cold.
