 What a discovery! Run with a passion for excellence by owner Tatjana, Restaurante Valverde achieves a rare and heady blend. An ambience and décor true to the  finest origins of calming, soothing Ibiza. Don’t be deluded however into believeing that ‘laid back’ refers to the standards. Tatjana understands very clearly that only attention to every small and personal detail creates that ‘ether’ which allows guests to find complete ease so readily. Glitches of any sort are not on the menu here!
Almost hidden in the middle of beautiful wooded Valverde, it enjoys views to Formentera. This is a small exquisite oasis which maestro chef James blesses daily with lovingly prepared creations. All the dishes are prepared to order, using only the finest of fresh ingredients. This not only promises a healthy diet, but allows those who suffer a food intolerance to request its omission from the dish. Closed on Thursdays, every Friday sees a new menu, always with an imaginative diversity. Little wonder so many customers come back again and again. Rte. Valverde is open from March 1st through to September 30th between 5pm and 11pm for dining, additionally, between May 11th and September 12th breakfast and lunch are available, with opening hours from 11am ‘til 11pm
Expect to pay in the region of €40 - €50 for dinner & wine for two, but please, remember to bring cash, as cards are not accepted.

From Cala Longa, head for Valverde, then at the fork, go left along the lower road for about 300m… Valverde is on the left.
Tatjana is loving her second year at Rte. Valverde, and it all runs so smoothly that you could be forgiven for thinking it’s been ten years. There is a cliché that runs: To make something appear effortless, requires a great deal of effort. That’s Valverde; Tatjana makes it happen. Clearly, here is someone who truly loves what they do.
No stone seems to have been left unturned in the endeavour to gently provide exactly what customers want. Beautifully light healthy breakfasts which satisfy without weighing you down, a Tex-Mex range of snacks and stone oven pizzas until 6pm, after which the main dinner menu delights. There are so many dishes with that twist of originality. One that caught my eye was the cream of carrot and pumpkin soup, with crushed pine nuts and ginger….. Absolute Heaven!
The feel of Ibiza is felt too through the music which floats in the background, chilled and soothing, gently easing the stress of the world from your shoulders….. And romance too…. just be prepared to fall in love with this place.
To indulge you further an attention-grabbing choice of cocktails is listed, ranging from the popular Mojito, to the more obscure and fascinating, such as a Hemingway Sour. The balance is held with an equally interesting range of alcohol free cocktails. A well-stocked bar managed by Andy completes the setting.
Of course the normal facilities exist that one would naturally expect, including WiFi for those who wish to keep in touch.
Whether you’re English, German or Spanish, there’s a menu in your language, and the team are helpful and friendly. With its capacity of fifty Rte. Valverde may not be large, but it certainly punches above its weight.
